ABSTRACT

This study was carried out to determine the yield, physical properties and chemical composition of lime leaf protein concentrates and bagasse extracted using three different methods (heat, acid and alum. Heat coagulation, alum precipitation and acid coagulation methods were used for the extraction of lime leaf protein concentrates. Thereafter, the yield, physical properties and chemical composition were determined using standard laboratory procedure.

From the results obtained, It shows that the Yield of bagasse 27.82% was significantly higher (p<0.05) than the yield obtained from the three methods, 1.82% for acid coagulation, 3.82% for alum precipitation and 6.38% for heat coagulation. The chemical analysis performed on the leaf protein concentrates and bagasse, CP, EE and Ash content from LPC obtained from acid and alum precipitation were statistically the same. The CP and EE of Bagasse (24.78% and 3.65% respectively) were significantly lower than the CP and EE obtained from all three methods. 

For the minerals, It showed that the Calcium, Magnesium, Sodium and Potassium from heat coagulation (815.30 mg/kg, 151.50 mg/kg, 23.85 mg/kg, 2315.00 mg/kg) was significantly lower than that of acid coagulation(884.00 mg/kg, 173.80 mg/kg, 128.49 mg/kg, 2407.00 mg/kg) and alum precipitation (952 mg/kg, 182 mg/kg, 24.41 mg/kg, 2456 mg/kg). Analysis of potassium and calcium showed that the alum coagulation had the highest values of potassium (2456.00 mg/kg) and (952.60 mg/kg).
