ABSTRACT
Eggrolls, often enjoyed as a popular snack or quick meal, are typically deep-fried with a mixture of various ingredients and egg. On the other hand, carbonated drinks, commonly available in various flavors and brands, are characterized by their high sugar content. The consumption of such foods and beverages by university students has raised concerns about their potential influence on health parameters, particularly the lipid profile. Therefore, the aim of this study was to determine the impact of eggroll and carbonated drinks consumption on lipid profile of university of Benin students. The study was carried out using a total of fifty (50) apparently healthy adults aged 18-30 years. It was a longitudinal study divided into two stages which were the pre-consumption phase (control phase) and the post-consumption phase (test phase) among each participant. The test phase involved eating eggroll and coke while the control phase involved fasting of participants. A total of 5mls of blood sample was collected twice for both test and controls samples for lipid profile analysis. Total cholesterol levels and HDL levels were determined using Enzymatic end point method while triglyceride was determined using GPO-PAP. Data obtained from this research was presented and analysed using statistical package for social sciences (SPSS) version 21.0 (IBM Inc. USA). The result showed that cholesterol, high density lipoprotein (HDL) and low-density lipoprotein (LDL) showed no statistically significant difference after consumption of eggroll and coke (166.27 ± 4.87, 48.07 ± 2.29, 98.27 ± 4.66 respectively) when compared to before consumption (164.40 ± 4.52, 49.83 ± 2.39, 98.93 ± 4.08) (p>0.05). Triglyceride was significantly higher after consumption of eggroll and coke (99.87 ± 6.39) when compared to before consumption (78.87 ± 4.01) (p<0.05). In conclusion, this study revealed a significant increase in triglyceride levels following the consumption of both carbonated drinks and eggrolls, while total cholesterol levels, high-density lipoprotein cholesterol (HDL-C) and low-density lipoprotein cholesterol (LDL-C) remained unchanged.
