ABSTRACT

This Research was conducted to determine some phytochemicals and functional properties of Thaumatococcus daniellii leaf protein concentrates obtained from three major markets in Edo South, Nigeria. Thaumatococcus daniellii leaves were obtained from Oba market, New Benin market and Uselu market, and they were processed into leaf protein concentrates in triplicates using heat coagulation method. The resultant Thaumatococcus daniellii leaf protein concentrates (T. dLPC) were analyzed for their phytochemical and functional properties. The data obtained from the yield and phytochemical analysis of Thaumatococcus daniellii leaf protein concentrate were subjected to Analysis of Variance (Anova) and the means with significant difference were separated using Duncan Multiple Range Test. The results from the phytochemical analysis showed that tannin was present in T. daniellii leaf protein concentrate in all three locations. Saponin and Alkaloid was moderately present in Oba market and Uselu, only present in New Benin. Flavonoids, oxalates and Phenols were present in all markets. The results from the analysis of functional properties showed that protein solubility was highest in New Benin, having value of 25.12% and lowest in Oba market, having a value of 21.62 %. Water absorption capacity and oil absorption capacity were highest in Uselu and Oba market, with values of 1.970 / 0.917ml/g and 1.248 / 0.857ml/g, respectively and lowest in New Benin market with values of 1.555ml/g and 0.785ml/g, respectively. Bulk density and Swelling index were highest in Uselu market with values of 1.167 and 1.540g/cm and lowest in Oba market with values of 0.555g/cm. Emulsion capacity was high in Uselu market with value of 4.14% and lowest in New Benin with value of 3.83%. Gelatinization temperature was high in Uselu market with value of 65.55 0C and lowest in Oba market with value of 61.09 0C. The results obtained in this study suggest that Thaumatococcus daniellii leaf protein concentrate has the potential as an alternative protein source for livestock and man.
