ABSTRACT
This study was to evaluate the proximate and mineral composition of Nigerian local cheese popularly called wara prepared from fresh cow's milk . 40 samples were collected from two locations, Okada and Eyean, monthly,that is, 20 balls of wara was collected per location in July and August respectively. Proximate composition was carried out following standard laboratory procedures of AOC 2016, the proximate values (g/100 g) recorded were ; 14.013,33.58,6.487,3.577,10.0660,31.68, and,2.145 respectively,for Ether Extract,crude protein,crude fiber,Ash, moisture content, Nitrogen free Extract and pH for Okada community.while , 14.657,32.08,6.730,3.553,11.187,31.79 respectively for Ether Extract, crude protein, crude fiber, Ash, moisture content and pH were recorded for Eyaen community,the results of Iron, manganese, zinc, calcium, magnesium, potassium and sodium in wara from Okada was,5.223,5.823,1.3333,10.533,5.823,7.543, and 3.047, respectively. While Eyaen recorded,12.903,7.077,7.543,6.450,1.6367 and 3.460,1.6000 values for calcium, Iron, potassium, magnesium, manganese, sodium and zinc respectively. Also, the concentration of the heavy metals, cadmium, Lead and chromium were 3.167,0.4667.and 0.8167 for Okada community, while 0.1833,0.233,and 0.9367 for cadmium, Lead and chromium respectively for Eyaen community.
