ABSTRACT
Kindirmo also known as sour yoghurt, is a fermented milk product mostly consumed by the Fulani people in northern Nigeria. It is made by boiling raw milk over a high heat for about 45mins and then left to ferment overnight after introducing a starter culture from the previously made batch. This study assessed the proximate and mineral composition of kindirmo processed from fresh cow milk and sold by the Fulani women in Okada and Eyaen communities of Edo State. 40 samples of kindirmo were collected at Okada in Ovia NorthEast Local Government Area and also at Eyaen in Uhunmwonde Local Government Area in the months of July and August and transported to the lab in ice packs. Samples obtained from the two locations were bulked separately and homogenized. Triplicates were taken for chemical analysis using standard AOAC procedures for chemical analysis (proximate composition, some mineral and heavy determination. Sample for mineral composition were subjected to wet digestion method and the mineral concentration read using the AAS and Flame spectrophotometer. Results of proximate composition obtained showed that the pH (2.213), moisture content (82.33%), ether extract (4.413%), crude protein (7.833%), ash (0.5633%), and nitrogen free extract (4.860%) for Okada samples while pH (1.790), moisture content (86.27%), ether extract (5.240%), crude protein (6.333%), ash (0.5300%), and nitrogen free extract (1.623%) were recorded for Eyaen. Minerals in the sample (mg/100g) were Fe (1.2400 and 1.5633), Mn (0.12333 and 0.16000), Zn (0.9267 and 0.8967), Ca (3.827 and 4.463), Mg (1.2533 and 1.5633), K (0.8333 and 1.4033), Na (0.4433 and 0.7433) got from Okada and Eyaen respectively. Concentration of Cadmium (0.03333 and 0.09333), Chromium (0.2300 and 0.4600), and Lead (0.1467 and 0.1533) were observed in kindirmo samples from Okada and Eyaen respectively. There was no significant difference between the cadmium levels of kindirmo from Eyaen and Okada likewise chromium also but a significant difference in the level of lead in the samples from Eyaen and Okada.
