PREVALENCE OF ENTERIC BACTERIA IN READY-TO-EAT SUYA AND ANTIBACTERIAL ACTIVITY OF Tetrapleura tetraptera Leaf extract

ABSTRACT

Ready-to-eat foods are a convenient and popular choice for consumers, offering an easy meal option. However, the safety of these foods is of utmost importance, as a potential source of foodborne illnesses caused by pathogenic bacteria and Tetrapleura tetraptera has an effective antibacterial agent. The aims of this project was to get the prevalence of enteric bacteria in ready-to eat suya and antibacterial of Tetrapleura tetraptera (Gum tree) leaf extract. The Research methodology involves isolation and identification of enteric bacteria, Qualitative Phytochemical screenings, Antimicrobial sensitivity of isolates of ethanolic leaf extrac to determine effect of smoking in meat, to determine effect of antibiotics susceptibility on isolate and to determine effect of gum tree leaf on bacterial. The bacterial isolate obtained are Escherichia coli, Klebsiella oxycota, Enterobacter sp and Morganella sp as contaminants of the suya, which the range of population size of the contaminants are and the phytochemical results showed the presence of Saponin, Steroid, Terpenoids, Phenol, Glycoside and Alkaloids but Flavanoids and Tannin were absent. Also, the zone of inhibition with ciprofloxacin (control) for Enterobacter sp showed susceptibility to Tetrapleura tetraptera extract at 50% combination while Klebsiella oxytoca, Morganella sp and Escherichia coli showed no susceptibility to extract combination from Tetrapleura tetraptera . Escherichia coli showed Minimum Inhibitory 50% concentration to Tetrapleura tetraptera extract while Klebsiella oxytoca, Morganella sp and Escherichia coli showed no Minimum Inhibitory Concentration to extract combination from Tetrapleura tetraptera .This study the lol of using the right hygienic safety precautions when making emphasizesTetrapleurasuya. It also emphasizes the tetraptera plant's potential as an antibiotic against intestinal infections.
