ABSTRACT

Because of their high protein content, dietary fiber, and useful qualities, legumes are a vital part of human nutrition and world agriculture.  The physical and functional properties of a few chosen legumes are reviewed in this study, along with their proximate composition and function. Grain size, shape, color, and weight are also examined.  The findings show a great deal of variation between species, which has consequences for consumer preferences, nutritional value, and processing.  While bigger types like Jack Bean (l – 18.8mm), Common White Bean (l – 10mm), and Black Bean (l – 22.60mm) are more suitable for direct ingestion, smaller legumes like Red Gram (l¬ – 22.60mm) and Black Gram (l – 5.20mm) are ideal for grinding into flour. changes in color indicate changes in the phytochemical makeup; darker legumes may have greater antioxidant properties.  The study emphasizes how important legumes are to sustainable agriculture and food security, especially because of their ability to fix nitrogen.  To increase nutrient bioavailability, however, anti-nutritional elements like tannins and phytates require suitable processing methods.  The study suggests improving conventional processing techniques, encouraging a variety of legume crops, and raising consumer knowledge of diets based on legumes.  To optimize the health advantages and industrial uses of legumes, further study should concentrate on their biochemical makeup and functional characteristics.
