ABSTRACT

Caladium bicolor, called Heart of Jesus is a tender perennial summer flowering bulb often grown as an annual bedding, container plant, houseplant or acaulescent herb grown for it's colourful, arrowhead-shaped leaves. It is also known to have some medicinal uses. In this study, we exploited the nutritive value of the plant. The proximate analysis revealed the following constituents; the moisture (11.12mg/100g), ash (1.42mg/100g), crude fibre (0.583mg/100g), crude fat (5.9mg/100g), crude protein (4.08mg/100g), dry matter (88.88mg/100g) and carbohydrate (76.89mg/100g) content. The mineral analysis also showed the presence of Ca, Mg, Fe, Na, P, Cr, Mn, K and Zn with potassium (k) and calcium showing a relatively higher percent of 770.41mg/100g and 582.02mg/100g respectively. The amino acid profile of the hydro-ethanol extract also showed the presence of all essential and non essential amino acids with glutamic acid having more predominance. The extract also showed richness in vitamin A as well as vitamin C with values of 9.99mg/100g and 14.41mg/100g respectively.
