ABSTRACT
Suya samples were purchased from Oluku, Main gate, Adolor, Isihor and Uselu. A surplus quantity of the suya was obtained at each sampling point, labelled and transported to the laboratory in sterile aluminium foil for analysis. From the sample, 1g was mashed and homogenized with 1ml of sterile distilled H20. Afterwards 10 fold serial dilutions upto 4 fold (10-4) was prepared from the dilution. 1 ml aliquot of the 10-2 and 10-4 dilution was plated on nutrient agar and MacConkey agar respectively and incubated at 30 oC for 24 hr. After incubation morphological and biochemical test were carried out for isolate identity. The mean heterotrophic bacterial count ranged from 2.30 x 105 cfu/g to 5.30 x 105 cfu/g while the mean coliform count ranged from 0.30 x 103 cfu/g to 1.55 x 103 cfu/g. The identified bacteria isolate were Escherichia coli, Proteus vulgaris, Bacillus sp., Staphylococcus aureus, Enterobacter sp. and Klebsiella sp.The isolate with the highest distribution of 60% was S. aureus while the least 20% were Escherichia coli and Enterobacter sp.These findings indicate that suya is highly contaminated with diverse bacterial species, and contains a high load of these contaminants. It is therefore advised that vendors should ensure proper hygienic practices during preparation and seek to adopt covering prepared suya to avoid bacteria contamination.
