ABSTRACT
Salvia hispanica (chia seed) has been known for over 5,500 years. Chia seeds were one of the most important components of the diet of Mayas and Aztecs. Chia is a good source of polyunsaturated fatty acids: omega-3 and omega-6, soluble dietary fibre. It also contains appreciable number of proteins and phytochemicals. Nutritional value of chia is the reason why it is used in prophylaxis of several non-infectious diseases such as obesity, hypertension, cardiovascular diseases (CVDs), cancer and diabetes, as well as their medicinal properties such as anti-diabetic, anti-inflammatory, anti-glycating, anti-hypertensive, Anthropometrics, Hypoglycemic, antioxidant capacity, and anti-cholesterolemic. This study evaluates the potential role of chia seed on diabetes. The plant material or sample of Salvia hispanica (chia seeds) was obtained from Wuse 2 market, local government, Abuja. which was further identified in the department of plant biology and botany, university of Benin. An herbarium specimen was deposited; UBH-D632 Herbarium number was given to the plant. In this study the ethanolic extract of Slavia hispanica (chia seeds) was used for this study and it was shown that that Salvia hispanica (chia seeds) may have the potential to inhibit digestibility and absorption of carbohydrate in the body by inhibiting alpha amylase, alpha glucosidase, and protein glycation activity.
