IMPACT OF EGGROLL AND CARBONATED DRINK ON GLUCOSE LEVEL AND LIVER FUNCTION

ABSTRACT

A global change in dietary habits has occurred over the last few decades resulting from the introduction of sweeteners such as fructose and sucrose by the food industries and some other snacks which even though they can seem to be handy may pose as a risk factor for some metabolic disease. With the growing prevalence of unhealthy dietary habits worldwide, understanding the impact of these specific dietary choice components on health parameters is of utmost importance. The study aimed to investigate the potential effect of carbonated drink and eggroll consumption on blood sugar levels and liver function parameters. These parameters include Aspartateaminotransferase (AST), Alkalinephosphatase (ALP), Alanineaminotransferase (ALT) and Gamma glutamyl transferase (GGT). Total of fifty (50) participants was enrolled for this study. Fifty (50) male and female participants were used as both control and test before consuming eggroll and carbonated drink (pre) and after consuming egg roll and carbonated drink(post). Blood samples were collected and spun, the serum and plasma samples were separated and used for the analysis. Commercially prepared reagents ware used in this study. The data generated were analyzed using statistical software SPSS version 25(statistical package for social sciences). The results from the study showed that Glucose was significantly higher after consumption of coke and eggroll (93.53±14.74) when compared to before consumption (68.93±11.87) (p<0.05). Aspartate aminotransferase (AST) and Alanine transferase (ALT) were both significantly higher after consumption (10.27±3.13, 5.93±2.45) when compared to before consumption (7.73±2.86, 4.87±1.67) (p<0.05). Alkaline phosphatase (ALP) was significantly lower after consumption of coke and eggroll (11.27±2.49) when compared to before consumption (13.87±2.54) (p<0.05). Gamma-glutamyl transferase was significantly higher after consumption (20.37±4.69) when compared to before consumption (17.80±3.50) (p<0.05). This study concludes that the significant rise in glucose levels and liver function enzyme may have correlations with some metabolic disorders and may be implicated in liver disease.
