ABSTRACT

The constant contamination of cereal product in Nigeria and major areas of the world at large by microorganisms like bacteria and fungi has been of great concern towards global consumer health as it leads to economic losses and causes potential health risks. Cereal preservation techniques in countries like Nigeria sometimes fall below par and would require proper hygiene practices. This study aims to investigate the condition of storage of most cereal products in Benin city while also identifying the microorganisms involved in contamination and toxin production as even upon heating some mycotoxins are x heat stable and enterotoxins produced by various bacteria like Bacillus cereus while also identifying the key factors contributing to their growth and survival. Aflatoxin production is a cause of global health challenges like cancers and organ failures. Though a food product cannot be deemed free from microorganisms, it should at least meet the minimum level.
