ABSTRACT

This study examined the Food Safety and Hygiene Practices among the selected Hostels of the University of Benin. Four research questions were raised to carry out this study, which are: What is the level of food safety among undergraduates in University of Benin hostels? To what level are food hygiene practices utilize by undergraduates in University of Benin Hostels? What is the relationship between food hygiene practices and food safety among undergraduates in University of Benin hostels? What are the factors influencing food hygiene practices and food safety among Undergraduates in University of Benin hostels? The research instrument use for this study was the structure questionnaire which was administered and collected to answer the research questions. The method of data analysis is the descriptive survey research design, using mean and standard deviation. From the finding, it was discovered that some hostels demonstrated good food safety and hygiene practices, others fell short of the recommended standards. Several factors were identified as contributing to the poor practices, including lack of training and awareness among food handlers, inadequate sanitation facilities, and insufficient monitoring by hostel management. It is imperative to implement regular training programs for food handlers to enhance their knowledge and skills in food safety. Hostel management should prioritize the provision of proper sanitation facilities, such as hand washing stations and clean water supply, to ensure hygiene standards are met. Additionally, regular monitoring and inspection of food handling areas should be carried out to ensure compliance with hygiene standards and the following recommendation were made. Regular monitoring and inspection should be conducted by hostel management to identify any lapses in food safety and take corrective actions promptly. The university should establish a food safety committee, comprising representatives from hostel management, food handlers, and the health department, to oversee and monitor food safety practices in the hostels. A campaign on food safety and hygiene should be launched across the university, emphasizing the importance of good food handling practices and creating awareness among students, staff, and visitors.
