SUMMARY

The study confirms that storage of T. Occidentalis in refrigerator is the best storage method unlike the wrapped in plantain leaves method of storage commonly used by the farmers in Edo state. This method was seen to prolong its shelf life, maintain its morphological appearance and retains its phytochemials as well as its ferulic acid content which is a very important phytochemical with lots of health benefit however, this is challenging because of the poor power supply in the country perharps Government intervention in improving power supply would go along way.The samples of T.occidentalis that were spread on rooftop, bare floor and mixed with bitter leaf appeared dried but they can still be used even for a longer period of time than the refrigerator method. This work also confirms that the wrapped in plantain leaf method does not really stand the test of time as it being rotten makes it completely unuseful.
