ABSTRACT
Plant –based milk as an alternative source of amino acid is needed especially by individuals who are vegans and those who are lactose- intolerance. Amino acid is an important nutritional compound needed by the body both for body building and proper functioning. The essential and non-essential amino acid are important dietary supplement that cannot be avoided by humans. This research work evaluates and determine the amino acid present in spray-dried milk when it was stored for 0-3m month. The results show that the melon seed milk is rich in both essential and nonessential amino acid: leucine, tryptophan, phenylalaline, valine, methionine, lysine, proline, tyrosine, histidine, glycine, glutamic acid, cystine, serine, threonine, aspartic acid. These amino acid are necessary nutritional requirement for human wellbeing. The result obtained from this research during the storage periods for month 0-3 shows the rang of value for the different amino acid: leucine (6.70-6.83), lysine (3.40-3.52), tryptophan (1.46-1.627), valine (4.34-2.223), methionine (2.35-2.45), proline (3.31-3.36), arginine (12.24-12.4), tyrosine (2.80-3.11), histidine (2.74-3.017), cystine (1.37-1.46), alanine (4.53-4.86), glutamic acid (13.72-15.1), glycine (4.66- 4.72), threonine (3.40-5.30), serine(4.16-4.46), aspartic acid (9.42-9.373). Therefore, melon-seed milk is one of the best alternative milk source for consumption.
