ABSTRACT
Vitamins are an essential part of the human diet due the various functions they play in the various organ systems of the body. They are generally obtained from food sources and plant oils are known to contain vitamins. This research was carried out to determine the quantity of fat-soluble vitamins (A, D, E and K) in mechanically-extracted and chemically-extracted melon seed oil for a storage period of 0 to 4 months. Results show these oils are rich in fat-soluble vitamins and the chemically-extracted melon seed oil contains more fat-soluble vitamins than mechanically-extracted melon seed oil. On comparison with the recommended dietary allowance (standard) values, our result values were higher which, therefore, showed that both oils are very rich in Vitamin A, D, E and K and can be taken in little quantity and will still meet the nutritional recommendation provided by the Institute of Medicine (US) 2002. Results from statistics reveals that p-value for all vitamins (p<0.05) was less than 0.05 which means there was a significant difference during the period of storage. Mechanically-extracted melon seed oil was used to produce perfumes and distributed to 40 panelists for usage and their response to its colour, odour and fragrance was extremely satisfactory, longing for more usage of these oils in the perfumery and other product development industries because it contains Vitamin E and other vitamins that are needed to improve our health nutritionally when used in our diets.
