ANTIOXIDANT STATUS OF THE LIVER AND KIDNEY OF WISTAR RATS FED WITH A DIET ENRICHED WITH MEAT BOILED WITH POTASH

ABSTRACT

This study was aimed at investigating scientifically the effect of consumption of meat boiled with potash on antioxidant status in liver and kidney of female wistar rats. Twenty-five (25) wistar rats divided into five (5) groups were used for this study. Group 1 served as the control and the rats were fed with water and normal feed (grower's mash), Group 2 served as the negative control (uncontaminated group) and the rats were fed with normal feed thoroughly mixed with meat not boiled with potash while Group 3, 4 and 5 were the test group and the rats were fed with normal grower's mash thoroughly mixed with 10%, 20%, 30% of red meat boiled with 3g of potash respectively in ratios; 9:1, 8:2 and 7:3 for a period of twenty eight (28) days. This was accomplished by assaying for superoxide dismutase activity as well as Malone dialdehyde, Catalase and Glutathione peroxidase activity after a period of 28 days. The results were statistically analysed and a p- value greater than 0.05 was considered statistically not significant while a p- value less than 0.05 was considered statistically significant. The results obtained from this study demonstrated no significant difference (P>0.05) in the activities of Catalase (CAT), Malone dialdehyde (MDA), Glutathione peroxidase (GPx), superoxide dismutase (SOD) of rats feed with potash when compared to the control in the kidney and liver respectively. However, there was significant increase (P<0.05) in the level of CAT, MDA in group 5 respectively and SOD in group 4 and 5 in the kidney of wistar rats when compared to the control. Also, there was significant increase (P<0.05) in the level of CAT and SOD activity in group 4 and 5 respectively when compared to the control of the level liver in wistar rats. However, excessive consumption of potash may lead to its accumulation that could cause severe and irreparable damage to the kidneys, liver and disrupt normal body functions which may eventually lead to loss of life.
