ABSTRACT

Burn injuries induce a cascade of physiological responses characterized by hypermetabolism. This study investigates the reducing power and antioxidant capacity of rice supplementary feed flour, comparing it to a protein powder (complan). The main objective is to evaluate the antioxidant levels of a wholly compounded indigenous supplementary burn feed flour. This study elucidate how cost effective accessible indigenous foods such as yam, maize (zea max), groundnut (arachis hypogaea), soya beans (glycine max), dry bonga fish (ethmalosa fimbriata) can be carefully formulated using appropriate percentage blend, to obtain the required to cana antioxidant level necessary to mitigate and neutralize the effect of oxidative stress, which indirectly can be used to treat burnt patients Our results demonstrate that the reducing power of the rice supplement flour is significantly higher than that of the control group across various concentrations (p < 0.05). Results from the study revealed that the aqueous extract contained significantly high of phenol (196.89mg/g), Total Flavonoids (379.24mg/g), Proantocyanidin (62.14m/g), Total Flavonol (365.85mg\g). On the other hand, Total antioxidant Capacity of Extract (52.19mg/g), Reducing Power (13.00mg/g) and Nitric Oxide Savenging Capacity Activity (52.41mg/g) when compared to standard, ascorbic acid, showed spatiently antioxidant level at (p < 0.05). Notably, the nitric oxide (NO) scavenging capacity of the rice supplement flour was significantly lower than that of ascorbic acid at concentrations of 20, 80, and 100 µg/mL (p <0.05), while no significant difference was observed at concentrations of 40 and 60 µg/mL (p > 0.05). Additionally, the analysis revealed that the rice supplement flour contains significantly higher levels of total phenols, total flavonols, and proanthocyanidins compared to the control group (p < 0.05). These findings highlight the viii potential of rice supplementary feed flour as a rich source of antioxidants, suggesting its beneficial use as a dietary supplement.
